Jazz up Meatless Monday with these sizzling brinjal bites
Who said Meatless Mondays have to be boring? Try Miami’s delectable brinjal, mozzarella and basil bombs on for size! The only hassle you’ll have is getting your own fair share at the table! Don’t stop to do the dishes, or there’s sure to be none left at all.
What will I need to buy?
- Enough brinjals to fill everyone’s stomachs
- 4 Tbsp cooking oil of your choice
- Miami Sweet Tomato Relish
- 1 round of mozzarella
- Fresh basil, roughly chopped
- (Optional) Pink tomatoes or tomatoes on the vine
- (Optional) Balsamic vinegar to dress
How easy is this Meatless Monday recipe to make?
It couldn’t be simpler! Bring your oil up to frying temperature in a shallow skillet. Pop in the brinjal slices, smeared lightly on both sides with the relish, and fry for 2 to 3 minutes each side. While you wait, grate the mozzarella. Mix in a generous helping of the tomato relish.
Now lightly oil an oven pan, and lay out your brinjal slices. Add generous helpings of the relish and cheese mix in between. Don’t be shy! Now roast at 180 ° C for 20 – 30 min. Why not add to this delicious dish with some roasted tomatoes? Simply place a single layer in a smaller oven dish, drizzle lightly with oil and season to taste- they can share the oven for the last 15 minutes.
Serve hot and toasty from the oven, with a little balsamic vinegar dressing on the side and a liberal sprinkling of basil.
Is this dish good for me?
Brinjals are a high-fibre, low-calorie food, and are just packed with nutrients. Of course, the mozzarella adds to the calorie content of the dish, but it also brings gut-healthy probiotics and a ton of protein to the table. Cooked tomato, like the tomato relish, is also packed with lycopene antioxidants to seal the deal.
