Winter Warmers with Miami Canners

Don’t let the winter blues get in the way of a good meal! Try these 2 simple winter weeknight meals with a South African twist. We can’t promise the weather will be great, but with Miami Canner’s fantastic products on your side, dinner will be a cinch.

Hearty beef seshebo

There’s nothing better than a toasty-warm, rich seshebo on a cold winter’s night. Well, there is one thing- this one-pot meal won’t even need you to do much washing up after, either! Bring a truly South African smile to the faces of your family, and serve this one up at the table tonight.

What ingredients do I need?

  • ½ cup beans. You can use dry or canned
  • 10 ml cooking oil of choice
  • 500 g stewing meat, fat off
  • 1 tin Miami tomato and onion
  • 2 carrots, chopped
  • 1 green pepper, seeds removed and chopped
  • 500 ml water
  • 2 potatoes, chopped
  • 300 g butternut, cubed
  • Spices: We suggest a little cinnamon (½ tsp or 1 stick), 2 tbsp curry powder
  • Salt, black pepper and lemon juice to taste

How do I make it?

If using dry beans, be sure to soak and drain them. Heat the oil in a thick-base pan, and fry the meat until golden and browned. Remove the meat from the pan, and fry the carrots, onion and pepper together until soft. Now, add the meat back, and finish with beans, salt and the spices. Allow to come to the boil, then reduce to a simmer. Pop on the lid, and leave to cook. It will take about 1 ½ hours if using dried beans, and ½ an hour with a can. Add the remaining ingredients and allow another ½ hour simmer time (or simply serve when everything is tender). Finish off with the lemon juice and pepper.

Baked potatoes with atchar

 

Winter’s the perfect season for a hearty baked potato. Whether you opt for a heart-healthy sweet potato (we recommend the orange variety) or stick with a traditional spud, this quick-and-simple meal is sure to warm everyone’s hearts

What ingredients do I need?

  • 4 roasting potatoes or sweet potatoes
  • 2 tbsp Miami mango atchar
  • 1 cup of yoghurt (or mayo for extra tang)
  • Sea salt
  • Oil of choice

How do I make it?

 

This one couldn’t be easier! Simply rub the potatoes with the oil and salt, and place in an oven pan. Roast at about 180 degrees Celsius. Sweet potatoes will take about 30 minutes. A classic potato may need a little longer. Stir the atchar into the yoghurt. When the potatoes are done, slice them, add a little butter (optional) and a generous helping of the atchar yogurt. They’re ready to eat!
