The lemon-granadilla pudding that brings summer right to your dinner table
Spring is in the air, summer fun is coming, and it feels like the whole world is in bloom. Isn’t it time you celebrated some of that joy on your plate, too? A hearty pudding rich in the tastes of summer is the perfect way to celebrate the change of seasons. Here’s Miami Canner’s favourite fragrant pudding, packed with all the goodness of lemon and granadilla- and plenty of love, too.
What you will need:
Despite being a baked pudding, the ingredient list for this one is simple. All you will need is:
- 60g butter, pre-softened
- 3/4 cup castor sugar
- 2 eggs, separated into yolk and white
- 1 large lemon, rind finely grated and set aside, also juiced
- 2 tablespoons Miami granadilla pulp
- 1 cup milk
- 1/4 cup plain flour
- pure icing sugar, to serve
What you need to do:
Now you have all your ingredients ready-to-go, it’s time to get busy in the kitchen. Pop the oven on to preheat to 180°C and grease up a suitable baking pan. You want at least 5 cm of depth in a 6 cup capacity dish.
Now grab your mixer and cream the butter and sugar together. When it’s light and fluffy, add the egg yolks slowly, ensuring the beat into the mixture properly. Next, stir in the rind, ¼ cup of lemon juice, your granadilla pulp and the milk. When it’s well mixed, sift the flour over everything. Again, stir it in well.
Rinse off your mixer to ensure there’s no contamination and beat the egg whites into soft peaks. Now fold the granadilla mix into the fluffy egg whites and pour the whole batter into your baking dish. We’re going to use a bain Marie, or double water boiler, to ensure this dish stays perfect. So add your baking dish into a baking pan, and add boiling water so it half submerges the dish. The dish will need about 45 minutes to cook in the over- it should just be firm on top. Allow it to stand for 5 minutes before dusting with icing sugar and serving.
