Ingredients you’ll need:
For the cake:
- 140g plain flour
- 320g caster sugar
- 10 large egg whites
- 1 tsp lemon juice
- 1 tsp cream of tartar
- The zest of 1 lemon
- Pinch of salt
- Miami’s Granadilla pulp, 1-2 cans depending on preference
For the icing:
- 230g icing sugar
For the syrup
- Miami’s Granadilla pulp, 2 cans
- 125ml water
- 110g sugar
What to do:
To make your delectable cake, get the oven heated to 180°C. Mix 100 g of the sugar and flour together, then whisk the egg whites until stiff in a separate bowl. Gently blend in the lemon, cream of tartar and zest, and then whisk a little longer. Lastly, whisk in the remaining sugar slowly. The end mixture should be glossy and thick.
Now it’s time to fold in the dry mix you created, half at a time. Then pop in the granadilla pulp. Some refinement is needed here, as it’s important not to overmix the batter. Grease up a Bundt cake tin, and pour in the mix.
It will need 35-40 minutes in the oven while you make the rest of the goodies.
Making the syrup and icing
For the syrup, you will need to bring all the ingredients together in a pan, and boil for about 15 minutes or so. Remove from the heat.
Allow the cake to cool for 10 minutes in the tin before leaving it on a cooling rack. Keep aside a couple of tablespoons of the syrup for decoration, and then slowly drizzle the cake in the remainder while it is still warm (not hot). Leave it to stand for at least an hour.
The icing ingredients simply need to be whipped together until smooth. Once the cake is completely cool and the syrup has pulled in, drizzle with the icing and your reserved syrup, and your cake is ready to tempt!
