Mushroom and tomato sauce with Polenta Balls

This delicious recipe is brought to you by @andilemkhonza_ kitchen genius. It marries a succulent, rich tomato flavour with the healthy lightness of polenta, all in a fun and whimsical package the whole family is sure to love.

 

For the Polenta balls:

  • 1 cup polenta maize
  • 750ml cups water

For the sauce

  • 1/2 diced onion
  • 125g white button mushrooms, halved
  • 1/4 red pepper (diced)
  • 1/4 yellow pepper (diced)
  • 1 can of Miami chopped tomato with green pepper
  • 1 tbsp red wine vinegar
  • 4 tbsp olive oil
  • 1 tsp red pepper flakes
  • 1/2 tsp basil ground( you can use fresh basil, finely cut)
  • 1/3 tsp thyme ground
  • 2 tsp crushed garlic
  • Salt and pepper to taste

 

How to make your dish

Meatless Monday should be a fun day 2Mix your polenta slowly into the water, while cooking over a low to medium heat. Don’t forget to stir occasionally! After 10-15 minutes, pull off the stove and set aside.

Heat your oil and saute your o\nions, peppers and spices until soft. Add the red wine vinegar, and allow the flavours to marry on a low heat for about 3 minutes. Toss in the tomatoes and mushrooms, and season with salt and pepper. Stirring occasionally, allow to simmer for 15 minutes.

Now the polenta is cool, wet your hands and shape it into balls (just like you would meatballs). Toss them through the tomato mix, stir and serve. Delicious!
