Perfect piquant pickles like you’ve never had them before!

If you’re looking for something novel to try with your pickles, however, we’ve got two fantastic (and utterly unique) reinventions of the humble pickle for you to try. You’re sure to fall in love!
Pickle-inspired fries to delight the heart
You heard that right! Super-crispy fries coated with delicious dill seasoning, there’s only one thing better- the fact that they’re pretty healthy too! So why not whip these out the next time you have a salty crisp craving?
1 large potato (or sweet potato)
¼ cup cooking oil or ghee
½ tablespoon coriander
2 teaspoons dill
1/2 teaspoon mustard powder
1/2 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon lemon juice
½ teaspoon salt
Preheat your oven to 230 degrees C. Cut your potato into sticks for the fries. Don’t make them too thin so they don’t dry out. Toss them in the oil and then the seasoning until well coated. Spread them out on a baking sheet. Bake then for about 15 minutes, flipping them halfway through, and enjoy!
These delectable fried pair up beautifully with MIAMI Braai Relish or MIAMI Boerie Relish as a quick and easy dipping sauce. Dice up some MIAMI Dill Cucumbers to enjoy, and delight in a salt-and-vinegar fusion your palette will crave.
Cajun fried pickle slices
Why not try something deliciously different at your next braai or special occasion? These delectable fried treats will soon capture your heart.
1 cup flour
1 ½ tsp Cajun seasoning
¾ tsp garlic powder
½ tsp salt
¼ tsp pepper
2 tbsp peri peri or hot sauce
1 cup buttermilk
500g MIAMI Dill Gherkins – drained, dried
Dip:
½ cup buttermilk
¼ cup mayo
¼ cup sour cream
1 tbsp lemon juice
¼ tsp peri peri/hot sauce
1 minced garlic clove
¼ tsp salt
⅛ tsp pepper
¼ cup fresh shredded parsley
2 tbsp fresh chives, chopped
½ cup blue cheese
Line a baking sheet with paper towels, and put a cooling rack on top. Grab a roomy cast iron or enamelled pot, and add about 10 cms of cooking oil. Either that, or break out your deep fryer. Heat it on medium heat until it hits about 180 celsius. Throw your flour and pickle seasonings together and whisk well into a smooth mixture, something like a pancake batter. Add a little water if needed. Dip your pickle chips in the batter, then drop them in the oil to fry. It should take 1-3 minutes a chip.
Carefully remove from the oil and allow to cool down on the rack. Blend all the dip ingredients together until just the right consistency for your taste. Eat and enjoy!
