Crispy Pickled Onion and Cheddar Cheese Mash

Who doesn’t love a decadent mash? With the slight piquancy of the onion to offset the soft, cheesy flavor of the mash, this is sure to be a braai hit for you.

This couldn’t be easier to make, either. Simply boil the potatoes until soft and fluffy, mash them up with skins or without, however you like it. Round the dish off with the butter and cream. Fry the pickle onions until nice and crispy, and stir them and the cheese into the mash. You’ll have a dish that’s delicious, creamy, and decadent.

Cuban Sliders

Sliders are an American invention, a small sandwich something like a burger, but sample-sized and delicious. This extra-special treat draws inspiration from Cuban flavours, but keeping the cheesy goodness of the traditional slider.

  • 2 packets of small sweet rolls
  • 500g thinly sliced deli ham
  • 9 slices Swiss cheese or mild cheddar (about 200g)
  • 24 Miami pickle slices

Topping:

  • 1/2 cup butter, cubed
  • 2 tablespoons finely chopped onion
  • 2 tablespoons Dijon mustard

Preheat your oven to 180 degrees C. Without separating the rolls, cut each package of rolls in half horizontally. Arrange the bottom halves in a greased baking pan. Now it’s time to have fun! Layer with ham, cheese, and pickles to your heart’s content, then replace the top halves of the rolls.

Gently melt the butter, stirring in the onion and the mustard. Don’t let the onion cook too much. Drizzle the sauce over the rolls so it soaks in. Cover with a little tinfoil, and bake for ten minutes. From there, take off the foil and allow them to brown, about another 5 minutes. Your sliders are ready to enjoy!
