Hearty Winter Stew with a Boerie Kick (using Miami Canners Boerie Relish and Anything goes tomato mix)

This flavourful stew is perfect for a chilly winter’s night. Packed with vegetables, tender beef, and a delicious kick from Miami Boerie Relish, it’s a hearty meal that’s both comforting and satisfying.

Ingredients:

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 kg stewing beef, cut into bite-sized pieces
  • 1 red bell pepper, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups (1L) beef stock
  • 1 (400g) can of Miami Canners Anything Goes tomato mix
  • 1/2 cup (125ml) Miami Canners Boerie Relish (There is a choice of THREE depending on your taste)
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened about 5 minutes. Stir in the garlic and cook for an additional minute until fragrant.
  2. Increase the heat to medium-high and add the beef. Cook for a few minutes, stirring occasionally, until browned on all sides.
  3. Add the bell pepper, carrots, and celery to the pot. Cook for 5 minutes, stirring frequently, until the vegetables begin to soften.
  4. Pour in the beef stock, Anything Goes tomato mix, Miami Boerie Relish, Worcestershire sauce, thyme, and bay leaf. Season with salt and pepper to taste.
  5. Bring the stew to a boil, then reduce heat to low, cover, and simmer for 1-1/2 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  6. Once cooked, remove the bay leaf and adjust seasonings with salt and pepper as needed.
  7. Serve hot with mashed potatoes, rice, or crusty bread. Garnish with chopped fresh parsley, if desired.

Tips:

  • For a thicker stew, you can add a corn starch slurry towards the end of cooking. Mix 1 tablespoon corn starch with 2 tablespoons of cold water and stir it into the stew until slightly thickened.
  • This stew is even tastier the next day! Let it cool completely, then store in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
