2 cups mielie meal
4 cups water
1 teaspoon salt
3 tablespoon olive oil or butter
2 eggs
1 ½ cups grated cheese (any cheese of your choice)
4 tablespoon freshly chopped mixed herbs or 1 tablespoon dried mixed herbs
1 teaspoon cayenne pepper
1 teaspoon paprika
1 cup sweet corn (frozen or tinned)
1 tin MIAMI Boerie Relish – drained
Pre-heat oven to 200°C. First make the pap, by boiling water, salt and olive oil or butter, add mielie meal quickly and with a fork mix well, place lid on and steam for 10 minutes. Remove from heat and allow cooling down. (left over porridge is a good alternative)
Mix the rest of the ingredients together with the cooled pap (porridge). Place heaped spoonful’s of the pap into a greased muffin tray, fill rather full as they do not rise at all, bake for approximately 20 minutes.
Tip: Add a handful of chopped bacon or left over “boerewors” and serve for breakfast.
