1 onion chopped
300g Basmati Aromatic rice
A Pinch of red pepper
2 tins MIAMI Tomato & Peppadew
500ml Vegetable stock
Salt& pepper
15ml butter
A few good quality kalamata olives
200g green beans blanched and halved
2 tins tuna chunks drained

Set oven at 180°C. Heat some garlic or plain oil in casserole and fry the onion until soft.  Add rice & red pepper, mix well. Add tomato and stock, with salt & black pepper. Close the lid and place in a hot oven for approximately 20 minutes.  Remove and add butter, olives and then tuna & green beans, place dish back in the oven for a few minutes just to heat thoroughly.  Garnish with freshly chopped basil.
